Pricora Research

National Dish Indices

Pricora tracks the typical restaurant price of iconic dishes using real observed menu prices. The headline figure is the median across independent venues in the dish’s home country. Ingredient Food Cost is a separate analytical layer.

Publication rule: a numeric National Dish Index is shown only when enough independent, eligible menu observations pass the dish definition, country, currency and quality gates. No estimated, synthetic or fallback menu prices are used.

Restaurant price and Food Cost are separate.

The National Dish Index measures what restaurants actually charge for the finished dish. The fixed classic recipe is retained separately for Food Cost analysis, so ingredient economics never get confused with the public menu-price benchmark.
