Gluten, crustaceans, eggs, fish, peanuts, soy, milk, tree nuts (almonds, hazelnuts, walnuts, cashews, pecans, Brazil nuts, pistachios, macadamia nuts), celery, mustard, sesame, sulphur dioxide and sulphites, lupin and molluscs.

How should I inform about allergens in my restaurant?

You can inform via the menu, a specific document or register, or verbal information duly backed by written material. What matters is that the information is available before the customer places the order.

What happens if a customer has an allergic reaction at my restaurant?

The restaurant may be held liable if it did not correctly inform about allergens. Consequences may include civil liability, administrative fines of up to €600,000 and, in serious cases, criminal liability.

Allergen regulations for Spanish restaurants

Regulation (EU) No. 1169/2011 on the provision of food information to consumers requires all restaurant establishments to declare the 14 mandatory-to-declare allergens in all their dishes.

In Spain, this regulation is complemented by Royal Decree 126/2015 and Law 17/2011 on food safety and nutrition, which establishes the applicable sanctions regime.
