Paella Valenciana: what the tracked ingredients cost for four portions

Pricora tracks live wholesale prices for 8 of the 11 ingredients of a paella valenciana for four people. Together they cost €5.32, or €1.33 per portion. That is a floor, not the full cost: three ingredients are not tracked yet.

Not yet tracked: rabbit (0.4 kg), sweet paprika and fresh rosemary. Rabbit is the one that matters. Add your own supplier price for it before you trust any total.

What this means for your menu price

The price you can charge follows from your full ingredient cost and the food-cost share you aim for. The arithmetic is simple: price per portion = ingredient cost per portion ÷ target share.

Example (illustrative numbers): suppose your full cost per portion, with rabbit and the rest, comes to €2.00 and you aim for 30%. Then 2.00 ÷ 0.30 = €6.67 per portion. Replace €2.00 with your own figure.

  • Start from the €1.33 floor, add the three missing items at your own supplier prices.
  • Saffron is €1.58 of the €5.32, about a third of the tracked cost: check that you quote it per portion, not per pinch.
  • Recheck when rice or chicken prices move; they are the two largest lines.

FAQ

Why is the total only €5.32?

Because it covers 8 of 11 ingredients. The three missing ones (rabbit, paprika, rosemary) are not in the total, so the real cost is higher.

Where do the prices come from?

From Pricora's live cost index, which uses wholesale price data and was last computed on 5 October 2026. See all indices at pricora.app/indices and check your own dish with the price analyzer.
