Read it as a snapshot of listed prices, not a market study. It includes every dish with schnitzel in the name (veal, pork, chicken and others), and one venue can list several. Berlin and Vienna have the largest samples; Munich and Zurich have fewer than 10 venues, so treat them with care. Prices in Zurich are in Swiss francs and are not converted.
One thing the data shows: Vienna's median (€15.95) is almost the same as Berlin's (€15.92).
What this means for your own price
The rule is simple: the ingredient cost you can afford = menu price × your target food-cost share. At a 30% target, using Berlin's figures:
- At the lower quartile (€12.00): 12.00 × 0.30 = €3.60 of ingredients.
- At the median (€15.92): 15.92 × 0.30 = €4.78.
- At the upper quartile (€19.60): 19.60 × 0.30 = €5.88.
Example (illustrative numbers): if your own ingredient cost for a schnitzel with side is €5.00, then 5.00 ÷ 0.30 = €16.67. That is just above the Berlin median, so you would need to be sure the dish justifies it. Use your own cost instead of €5.00.
